Food safety is a shared responsibility which is why the HACCP regulations are referred to as farm to table. Salmonella levels on poultry can certainly be reduced by the growers and processors but never totally eliminated. However, if the poultry is properly cooked to 160 degrees F, the salmonella is destroyed
